Eggs are AWESOME! Which is why we love anything with eggs, including this delicious egg salad recipe!
And, it's crazy simple, which makes us like it even more! The best part about it...well, there are lots of "best parts", such as:
It provides a great snack or meal
There's Zero Soy
Zero Sugar (unless you make a sandwich of course)
Zero Gluten (again, unless you make a sandwich or dip with chips)
No Dairy
Full of amazing and filling fat and protein!

Ingredients:
8 boiled, peeled and chopped eggs
1/3 - 2/3 C of Avocado Mayo (or 5oz plain greek yogurt if you don't mind the dairy)
1 TBSP Dijon Mustad
1/2 red onion chopped
1/4 C of relish or chopped pickles
salt and pepper
Preparation:
Combine all ingredients together and certainly add more of something if you prefer.
Store in the refrigerator and enjoy as a standalone, on a bed of spinach or salad, as a sandwich, with veggies, etc. There is no right or wrong!
