Peanut Butter Protein Balls


Who isn’t in need of something quick, healthy, balanced and high in protein that is easy to make and that the whole family will eat—even our picky kids! Like our tasty Peanut Butter Protein Bars, we have created Peanut Butter Protein Balls that are slightly different but equally as delicious.

These gluten, dairy & soy free protein balls are a fantastic to eat pre or post workout, as well as for breakfast or any snack throughout the day. Each ball is low in carbohydrates and high in protein. You can also increase the amount of protein by adding an additional scoop of protein powder and decrease the amount of sugar by purchasing peanut butter with zero sugar. It’s that easy! As for storage, all you need to do is keep them covered and refrigerated (and that’s so the chocolate doesn’t melt). Enjoy!!

Ingredients:

  • 16 oz jar of Peanut Butter (organic and no sugar preferred)

  • 1/3 Cup Honey (Local and raw preferred)

  • 1 1/2 C Gluten Free Rolled Oats

  • 1 TBSP of Vanilla Extract

  • 1 Scoop Jay Robb Egg White Protein Powder -Chocolate or Vanilla (to increase protein per ball, add an additional scoop of protein powder)

  • 1/4 C Unsweetened Coconut Chips

  • 3 TBSP Enjoy Life Semi-Sweet Chocolate Mini Chips (dairy, nut and soy free)

Directions:

To soften peanut butter and honey, on stove top slightly heat large mixing pot and stir in peanut butter and honey. Remove from heat and with the exception of the chocolate chips, stir in remainder of ingredients.

Remove mixture from warm pot and allow to cool before mixing in the chocolate chips. Shape mixture into 25 balls.

Makes 25 balls
