Simple, Wholesome Ingredients
INGREDIENTS
Berry Base:
8 cups of your favorite berries (fresh or frozen). I used a combination of fresh blackberries, blueberries and strawberries.
1/4 cup maple syrup
2 tbsp lemon juice
2 tsp vanilla extract
2 tbsp arrowroot flour (cornstarch will work too)
Cobbler Mix:
2 cups of gluten-free rolled oats
1 cup of finely chopped walnuts
2 cups of almond flour
1/2 tsp sea salt
1 cup of maple syrup
2/3 cup of melted butter (you can also use coconut oil)
2 tsp vanilla extract
Instructions
Preheat oven to 350
In a large bowl, mix together blueberries, maple syrup, lemon juice, and vanilla. Then add arrowroot starch/flour and toss blueberries.
Spoon berries into an 9×13 inch baking dish, leaving juice in bowl behind.
In another bowl, mix together oats, walnuts, almond flour, and salt.
Stir in maple syrup, melted butter, and vanilla until well combined.
Spread cobbler topping on top of blueberries until most of the blueberries are covered.
Bake in oven for 40-45 minutes or until topping is golden brown.
Let cool for 15 minutes before eating. Store leftovers in refrigerator.
