Thai-Inspired Chopped Kale Salad with Homemade Peanut Dressing

Don’t knock it till you’ve Chopped it!
Chopped salads are just the best for a quick and cool springtime meal, and this Thai-Inspired Chopped Kale Salad by Austinite, Taylor Dadds, of One Balanced Life is so amazingly tasty that ALL THE PEOPLE IN MY HOUSE ate it up! If you're someone who cooks for all the people, you know how hard that can be. And the peanut dressing…TO. DIE. FOR. So, take it easy tonight and let’s get chopping!
Salad Ingredients
3 C chopped kale (we used the Sweet Kale Chopped Salad mix from Costco)
3 C chopped green cabbage (we used a packaged tri-color coleslaw mix)
1 red bell pepper, chopped
1/3 cup shredded carrots, chopped
2 tbsp cilantro
1/4 cup green onion
1/4 cup unsalted peanuts
2 TBSP Green Onion
For added protein, we added 1/2 C chopped chicken breast
Peanut Dressing
1/3 cup creamy peanut butter
1 lime, juiced
1 tsp honey
2 tbsp coconut aminos
1/4 tsp garlic powder
1/2 tsp sea salt
dash of ginger
3 tbsp water (may need to add more for consistency)
Instructions
Chop all salad ingredients
Place all chopped salad in a bowl + chicken, and toss
In separate bowl, mix all peanut dressing ingredients in a bowl.
Drizzle peanut dressing on your salad and mix.
Enjoy and get ready to lick the bowl!
