Regardless of the time of year, these super simple and detoxifying recipes are great for their immune-boosting ingredients but are especially perfect for those cold fall and winter days.
Sweet Potato Bisque by Everyday Detox
Ingredients:
1 tsp Coconut Oil
1 yellow onion, chopped
2 garlic cloves, minced
2 lbs sweet potatoes, peeled and chopped
2 tsp curry powder
1 1/2 tsp sea salt
3 C Water
1/2 C Almond Milk
Preparation:
Melt coconut oil in large stockpot over medium heat and saute' the onion and garlic until very soft, about 10 min.
Add sweet potatoes, curry powder, salt and water and bring to a boil. Lower the heat to a simmer, then cover and cook until the sweet potatoes are fork-tender, about 15 min.
Use an immersion blender to blend soup directly or carefully transfer the soup, in batches, to a food processor of blender, and then carefully blend into a silky-smooth consistency.
Return the blended soup to the stockpot, stir in the almond milk, then heat and serve warm.
Carrot Ginger Soup by Everyday Detox
Ingredients:
1 tsp Coconut Oil
1 yellow onion, chopped
2 garlic cloves, minced
1 pound of carrots, chopped (about 3
3 C water
1 1/2 tsp sea salt
2 tbsp freshly minced ginger
1/2 C Coconut Milk
Preparation:
Melt coconut oil in large stockpot over medium heat and saute' the onion and garlic until very soft, about 10 min. Add the garlic and saute' until fragrant, about 1 min.
Add the carrots, water, salt, and ginger, then bring to a boil. Lower the heat to a simmer, then cover and cook until the carrots are easily pierced with a fork, about 20 min
Transfer soup to a blender of food processor and process until smooth.
Return the soup to the stockpot over medium heat, stir in the coconut milk and heat to the desired serving temperature. Serve immediately.
