Rainbow Salad with Homemade Cilantro Lime Dressing



You know how we're encouraged to "eat from the Earth" and eat the colors of the rainbow? Well, we found a way to do it all in ONE meal...and it's DELICIOUS!

We found this amazing salad and homemade dressing recipe from @healthygirlkitchen and oh.my.goodness.... it's as amazing as it looks.


Honestly, the chopping of the fruit and veggies is somewhat time consuming, but it's well worth the deliciousness and nutrition...and the salad is huge (so you can share) and dressing recipe makes a ton so you'll be able to use it for several salads.


The salad ingredients are:

  • 2 cups chopped kale

  • 2 cups cubed mango

  • 1 cup avocado

  • 2 cuped diced cucumber

  • 1 cup steamed corn

  • 1/2 c diced red onion

  • 1 cup diced bell pepper


The dressing ingredients are:

  • 1 head cilantro

  • 1/4 cup lime juice

  • 1/3 cup avocado oil

  • 3 tbsp water

  • 1/2 cup cashews

  • 1 tsp garlic

  • 1 tsp salt


Blend all dressing ingredients in a high speed blender and toss in salad! Enjoy the rainbow!!!
