Paleo Chocolate Lava Cake

Our Austin Member Spotlight, Carolyn Meakin, said she burpees for chocolate...and so do we! Check out this ah-maz-ing Paleo Chocolate Lava Cake we recreated by none other than Beach Side Kitchen (@beachsidekitchen)


Paleo Chocolate Lava Cake

2 Eggs

1 Egg yolk

1/4 cup Coconut Sugar

1/2 tsp Vanilla Extract

1/3 cup melted Coconut Oil or Grass Fed Butter

1/2 cup Enjoy Life Chocolate Chips

3 tbs Almond Flour

1 tbs Tapioca Flour

pinch of Salt


  1. Grease two 6 inch ramekins with Coconut Oil (or three 4 inch ramekins). Melt Butter/Coconut Oil and Chocolate in the microwave in 30 second increments, stirring frequently. In a separate bowl, whisk together Eggs, Coconut Sugar, and Vanilla Extract.

  2. Slowly add in Chocolate mixture to Egg mixture, whisking frequently. Last, add in dry ingredients and stir until well combined.

  3. Pour into ramekins, and bake at 350 for 10-12 minutes until edges are set but center is still gooey. Let cool for 1-2 minutes, then run a knife around the edge. You can serve in the ramekin or turn over on a plate.
