The second greatest invention is avocado egg salad on toast or in a bowl and used for dipping crackers or veggies. Avocado Egg Salad Toast


Prep time: 12 minutes

Cook time: 3 minutes

Serving size: 2


INGREDIENTS

  • 3 hardboiled eggs (we love the Costco organic hard boiled eggs)

  • 1/2 medium avocado

  • 1 tsp dijon mustard

  • 1/2 tsp whole grain dijon mustard

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • dash of pepper

  • optional topping: crushed red pepper and fresh dill served on top

DIRECTIONS

  1. In a small bowl, chop hard boiled eggs

  2. Combine chopped hard boiled eggs, half of an avocado, dijon mustard, whole grain dijon and spices. Mix together to combine.

  3. Adjust seasonings to preference if needed.

  4. Top salad on two pieces toasted seed bread with red pepper flakes and fresh dill on top.
